This year, we are excited to be developing seasonal baking recipes to make the best of our local, sustainable produce.  This recipe is inspired by classic ratatouille but comes together much more quickly! It’s a rustic tart, so don’t worry about being too neat – the colours of the tomatoes, courgettes, and red onion always end up looking beautiful. Swap ricotta for goat’s cheese for a fun twist.
