There’s nothing quite like cooking with seasonal Scottish ingredients at the height of summer, and in this hands-on class we’ll show you how to turn fresh produce into satisfying, flavour-packed salads and light summer dishes. You’ll work with ripe fruit, fresh herbs and in-season vegetables to create a selection of recipes that are generous, balanced and perfect for  family lunches, al fresco dinners or garden gatherings.

During the class we’ll explore a variety of salad styles and techniques. You might make a chilled gazpacho with vibrant summer tomatoes, a strawberry panzanella that plays with texture and acidity, or a simple vegetarian tart that brings colour and body to the table. We’ll also talk about seasoning and dressings, how to combine ingredients so they sing together, and ways to adapt recipes depending on what you can find locally.

Whether you’re a complete beginner or you already love cooking with seasonal produce, you’ll leave with new skills, delicious salads to take home, and plenty of ideas for using Scottish summer ingredients in fresh, satisfying ways.

All ingredients provided. Suitable for all skill levels.

Finding us: We’re at 47 Peffer Place, Edinburgh, EH16 4BB. Please arrive 10 minutes early if possible.

What to bring: Please bring tupperware to take home anything you cook, a notepad and pen if you’d like to take notes, and warm layers — it can get a little chilly in the kitchen.
