Italian cooking is rooted in a few key principles: good ingredients, simple techniques, and confidence in the kitchen. In this hands-on class, we’ll explore the foundations of Italian home cooking, focusing on how small details make a big difference.

Led by our in-house Italian chef, Carlo, the class draws on the kind of everyday cooking you’d find in homes across Italy — generous, practical food that goes beyond the usual pasta-and-pizza clichés. You’ll cook a selection of classic Italian dishes that highlight vegetables, proteins, and pantry staples, learning core techniques that can be used again and again at home.

Along the way, Carlo will share tips on flavour-building, seasoning, and how to get the most out of simple, affordable ingredients — from understanding balance and timing to letting good produce speak for itself. Expect plenty of hands-on cooking, tasting, and practical advice you can take straight into your own kitchen.

Finding us: We’re at 47 Peffer Place, Edinburgh, EH16 4BB. Please arrive 10 minutes early if possible.

What to bring: Please bring tupperware to take home anything you cook, a notepad and pen if you’d like to take notes, and warm layers — it can get a little chilly in the kitchen.
